Kim Campbell is the author of three cookbooks: “PlantPure Nation,” “PlantPure Kitchen” and “PlantPure Comfort Food.” She has developed hundreds of delicious whole food plant-based recipes using no processed oils.


In her work at PlantPure, she collaborates with her husband, Nelson, building an organization that promotes a whole food plant-based diet and skills to live a life of wellness.


Nelson directed and produced the groundbreaking movie, PlantPure Nation, within which both Kim and Kathryn appear. Kim believes that people’s understanding of how to prevent and treat coronavirus infection and other viral infections were hindered by the lack of education and emphasis on prevention principles that are proven to be helpful.

With her father-in-law, Dr. T. Colin Campbell, her husband Nelson, and others in the Campbell family and their colleagues, Kim worked during the pandemic and afterward to bring awareness and practical strategies to those who wanted to weather the pandemic in the best possible way.

Kim graduated from Cornell University with a BS in Human Service Studies with a concentration in Nutrition and Child Development. Her passion has always been nutrition education for children, families, and adults. Kim has been a plant-based cook for more than 25 years cooking for her family and friends. Her love of culinary goes back to her early childhood growing up in a large traditional family. Kim is gifted at creating traditional American cuisine using 100% accessible plant-based ingredients. She builds flavors and textures that are familiar to most people, helping to make the transition to plant-based diet easier for people.
