Hi, I am Todd Kurland. For the past 4 years I’ve been following Caldwell Esselstyn’s diet for a healthy heart, outlined in his studies and his book ‘Prevent and Reverse Heart Disease’. It’s a super-healthy and protective vegan, no oil diet. And I’ve thoroughly enjoyed the peace of mind and continued good health that it affords.
That said, and pardoning the pun, eating healthy isn’t for the faint of heart. It’s one thing to make healthy meals. It’s another to make every meal healthy.
Thankfully, while I’m not a chef, I am an engineer. And, at least in my case, it’s taken an engineer’s approach to this diet to help me sustain it.
One of the first challenges I had was learning how to take this diet on the road. Whether that meant getting together with friends for an evening, or going out to dinner. Going on a business trip or a family vacation to London for a week. Surviving a 4 day bicycle trip, or a 9 mile, all-day hike in the White Mountains. Or just taking lunch to work.
Over the years, I’ve developed some routines. And I hope to share some of those tips and ideas to help others maintain the healthy diets we all aspire to. For those times when we need to find a way to live our lives and stay on the diet, when it seems impossible to do both.
