Kim Campbell is a chef, educator, parent, author and the Director of Culinary Development and Education at PlantPure.
During her years of helping people transition to whole, plant-based eating, Kim has noticed that people get caught up in minor details. The beauty of eating whole grains, legumes, fruits, and vegetables from the sea and earth, and listening to your body’s messages about hunger, satisfaction and fullness, means that you never again have to measure, count calories or harshly judge yourself.
I think you have to get people to feel well enough [through improving their eating patterns] so that they can begin to connect in other avenues.
Kim is the author of two cookbooks: “PlantPure Nation” and the “PlantPure Kitchen”. She developed more than 250 delicious whole food plant-based recipes using no processed oils.
In her work at PlantPure, she collaborates with her husband, Nelson, building an organization that promotes a whole food plant-based diet. Nelson directed and produced the groundbreaking movie, PlantPure Nation, within which both Kim and Kathryn appear.
Kim believes that people’s understanding of how to prevent and treat coronavirus infection has been hindered by the lack of education and emphasis on prevention principles that are proven to be helpful.
None of the doctors on TV, not Fauci, not Sanjay Gupta, have talked about prevention.
With her father-in-law, Dr. T. Colin Campbell, her husband Nelson, and others in the Campbell family and their colleagues, Kim works to bring awareness and practical strategies to those who want to weather the pandemic in the best possible way.
Our networks are controlled by large corporations, food corporations. We will never, ever have plant-based healthy cooking shows because the Food Network is owned by Kraft and all these other companies.
Kim graduated from Cornell University with a BS in Human Service Studies with a concentration in Nutrition and Child Development. Her passion has always been nutrition education for children, families, and adults. Kim has been a plant-based cook for more than 25 years cooking for her family and friends. Her love of culinary goes back to her early childhood growing up in a large traditional family. Kim is gifted at creating traditional American cuisine using 100% accessible plant-based ingredients. She builds flavors and textures that are familiar to most people, helping to make the transition to plant-based diet easier for people.
Together, Kim and Kathryn explore these topics and much more:
- What is the upcoming Healing America film about?
- What are the Cook Along Programs?
- What are the Rx Programs?
- How can people join a PlantPure Pod?
- How can people purchase PlantPure food, both in grocery stores and for in-home delivery?
