And if you made it this far, here is an easy double chocolate chip cookie recipe just for you.
DOUBLE CHOCOLATE CHIP COOKIES (vegan)
160g all-purpose flour
100g your favorite plant based butter
100g brown sugar
100g white sugar
30g cacao powder
1/4 cup soy milk
2 tablespoon apple cider vinegar
1 tsp baking soda
1 pinch of sea salt
dark chocolate chunks (as much as you want) I like lots!!!
Preheat the oven to 175°C
mix butter with sugar. A mixer works well for this using the paddle attachment
add flour and baking soda, then mix more
add cocoa powder, apple cider vinegar & soy milk and mix more
chop up your dark chocolate into nice cookie size pieces
fold chocolate chunks into the dough. you can use the mixer for this but on a low speed and only for a few seconds
with parchment paper on a tray, shape your cookies (should be 12-15). Leave space for them to spread. Remember, baking soda makes things spread! Baking powder makes things rise 🙂
bake for about 10 minutes and take a look to see if they have that nice color you want.
remove them from the oven and do your best to let them cool before you eat them. I warn you, if you have a cookie monster in your house, do this when you are at home alone!! If you are the cookie monster, well, I say no more!
