Getting Started with Food
Introduction to Whole, Plant-Based Foods
What foods do we recommend in an Integrative approach to health? Whole, plant-based foods. When you compose your meals of legumes, whole grains, vegetables, fruits and spices, you give yourself all the deliciousness and sustenance needed to boost your immunity and nourish your mind, body and spirit. You benefit your health, the health of the planet, the health of animals and world hunger, all in one life-strengthening action.
Dr. Kathryn Hayward with T. Colin Campbell PhD
Dr. T. Colin Campbell and Dr. Kathryn Hayward first became acquainted after The China Study was published. When Kathryn read the book, she was shocked to realize that her nutrition recommendations for her primary care patients for the past few decades had been misguided. She delved into the research included in the book and became convinced that a whole food, plant-based way of eating would benefit her health, the health of her family and many of her patients. She wrote to Colin, and they corresponded until he came to Boston for a conference, at which time they met in person. Since then, they have shared memorable and professionally powerful experiences, including during the filming of PlantPure Nation, a documentary film written and directed by Colin’s son Nelson.
Colin’s 60-year career has been dedicated to the science of human health, particularly the association between diet and disease. Kathryn is not alone in regarding Colin as the father of the science of the whole food, plant-based movement. Their conversation is wide ranging, focusing on Whole Health, sharing their warm regard for one another and their perspectives on the challenges our world is facing.
